Wild fennel and lemon balm pesto

At the beautiful Villa Bellosguardo, near Florence we can walk around and always get the chance to find something to bring home with us... It may be  a beautiful porcino mushroom, a bunch of origanon or, as it happened just few weeks ago... wild fennel and lemon balm...
we picked up a beautifu bunch of each and my intention was to use them separately.



The idea came at home, why not putting together both erbs? Yes but to do what?

I needed to prepare some pesto for the children, and also they like wild fennel.... Yes! Fennel and lemon balm pesto with almonds and garlic. It will work! And it did!
