Ingredients:
. 350 gr g/free mix flour
. 100 gr oat flour
. 50 gr buckwheat flour
.400 ml water
. 7 gr yeast
. 1 pinch of sugar
. 2 tablespoons olive oil
. 1 pinch of salt
Instructions:
In a bowl melt the yeast with water and the sugar, add the flour and the oil and knead.
Dust with some flour the work surface and knead gently until smooth. Now you can add some salt and arrange a final kneading getting help from a bit of flour.
Put the dough in a bowl and leave it to rest overnigh into the refrigerator. Take it our the refrigerator and let it warm.
Shape the dough into baguette or loaf and leave it to rise for about 1 hour or so on 28-30°
Pre-heat the oven on 200° and cook the bread for about 1 hour leaving in the oven a small cup of water.
